We have built a mini brewery at the SCC Davis Center and will be offering our first "Introduction to Beer and Brewing (Nutri 336) class" in Fall of 2023! Many faculty have expressed interest as we begin to build this class as well as a food/beverage focused makerspace. Come learn about and be a part of this exciting endeavor!

About the Presenter
Jessica Coppola is a professor of Nutrition and Food Science. She is an avid maker and especially likes making food and beverages of all kinds!
Food & Beverage Makerspace Vision
Jessica is working to create a “food/beverage makerspace” which will give students the hands-on experience to begin making changes in themselves, their families, their communities and eventually the world!
Our vision is to build a research and development kitchen and garden with everything a person would need to begin growing and cooking healthy food.
Some of our ideas include:
- A fully functional kitchen with: Oven/microwave/countertop space and equipment for preparing and cooking
- Basic Food Preparation and Preservation equipment (pickling, dehydrating, canning)
- Basic Equipment needed to prepare: Beer, wine, kombucha, cider
- Hydroponic Gardens that can grow food indoors
- A small outdoor farm plot that we can grow and harvest vegetables from (I’m working with UC Davis on this one).
What curriculum would be associated with the Food & Beverage Makerspace?
Currently, we have the following curriculum that could utilize this Makerspace extensively:
- NUTR 300 Nutrition
- NUTR 335 Food Science
- NUTR 336 Beer Brewing
- CHEM 333 The Science of Coffee
- MAKR 140, 151, 152 (“Students will gain knowledge of common fabrication techniques and skill using the associated tools, such as: …food and beverage making and processing, and more.”)
There are additional classes that could enhance their curriculum by utilizing the space:
- NUTR 300, 310,330
- Organic CHEM
